This is a short recipe that I found quite tasty. It’s inspired from a Schnitzel recipe that’s traditional in Romania.You will need, for three to four people:
- a frying pan
- 250 g (9 ounces) of chicken
- two eggs
- 100 g (3.5 ounces) of flour
- 8 thumbnail-sized balls of mozzarella cheese
- enough oil to cover the bottom of your frying pan for a half inch
Dice the chicken, then mix it in a bowl with the eggs and the mozzarella. Add salt generously, as well as any herbs you enjoy (my favourite in this dish is bay laurel, but thyme works as well). Start mixing while gradually pouring the flour until you get a sticky mix:

Once the mix is ready, start warming up the oil. Keep the heat low (otherwise you will get a crusty shell around mostly uncooked paste) and, as soon as the oil is hot enough, grab a mozzarella ball, wrap it in some paste and meat, and dip it. It will begin to fry: as soon as it starts looking brownish, turn it over, wait for a short while, and remove it:

When a given piece is cooked, put it on some paper towels. Repeat this process for all eight mozzarella balls.The dish may be served either hot or cold. I tend to eat it cold with some tomatoes and onion.
